The nitrogen found in the Rocks District helps keep the yeast happy and able to strongly move through fermentation. 🥣 Happy National Gumbo Day y’all! Now I know that in some places this isn’t a big deal. Some folks may not even know what gumbo is. But in my neck of the woods, a pot of gumbo is always worthy of a celebration. Mr. Corkscrew hails from south Louisiana and it’s an even bigger deal for him! 🥂And now the wine! Cause it’s always about wine! 🤷🏽♀️ Back in the day, I would pop open an ice cold beer 🍻 to have with my gumbo. But given then I don’t drink beer much anymore, you know I HAD to find a wine for my gumbo. It took some trial and error, but I have found that a Bordeaux Blanc style wine is a great pairing. But you need both the Sauvignon Blanc and the Semillon for the pairing to work. 🥂Cue this fantastic Chaleur Blanc from DeLille Cellars. I visited the winery a few years ago and it was one of those places where I literally bought at least one of EVERY WINE I tasted as well as some I didn’t! My blog post on that WA wine visit is by far THE MOST READ post on the entire blog! 🥂DeLille Cellars has been making their Chaleur Blanc for quite a while now. In fact, this is their 25th vintage of this wine! I’ve always been a fan - it was even one of my WINES OF THE YEAR in 2019! This one is 69% Sauvignon Blanc and 31% Semillon. I lean very much to the tropical fruit side when it comes to my Sauv Blanc and this one provides tropical and stone fruits (peach and apricot) balanced by bright acidity and . Rich and nicely textured it provides both a comparison and contrast to the gumbo. For harvest of 2020 we're set to work with from the 4,040 acres of Red Mountain: 6 different varietals, sourced from 14 vineyard sites, split into 55 unique vineyard blocks, which get separated into ~200 fermentations in the cellar, and tasted and toiled over a countless number of times. Every vintage we're amazed by the consistency of quality, variety of wines that we're able to make from such a small area of land while still keeping those classic Red Mountain characteristics across the board, and especially in this vintage the resiliency of our vines and all the people that go into maintaining them. Yesterday visiting the new spacious and modern DeLille facility, staff and patrons were grinning ear to ear. Staff love serving great wines and patrons love enjoying the wines and the great hospitality experience. For those of you who have never visited their new tasting room, it is a must-visit, as everyone is socially distanced with plenty of space and fresh air in a wonderfully modern setting. A few weeks back I was sent the new lineup of DeLIlle Cellars wines and was blown away with the overall quality. One of Woodinville’s historic outposts, for more than a decade DeLille was led by eminent Washington wine pioneer Chris Upchurch. About ten years ago Chris made the brilliant decision to hire Jason Gorski to be his assistant, as Jason had been working for Ste. Michelle properties for several years, gaining a depth of varietal knowledge during that compelling experience. Jason now serves as director of winemaking and his new red wines all share the common thread of concentration, power and finesse. I absolutely loved the elegant 2017 DeLille Cellars ‘Chaleur Estate’ Red Wine (WWB, 95) which is wonderfully elegant with serious range and tension. Even better was their 2016 DeLille Cellars ‘Lot 3.’ Cabernet Sauvignon (WWB, 96) which is gorgeous with its dense core of dark fruits and has a long life ahead of it. This was brewed back in April, most of the batch is being barrel aged, but there were a couple kegs that just wouldn't fit. Consider this a sneak preview of what's to come. 👉2017 Barrel Aged Fade Out, originally released for our first annivery. This imperial stout was aged in woodinvillewhiskeyco Rye Whiskey Barrels. This is the very last of this beer we have, when it's gone, it's gone. 👉Tomorrow we have a new Triple Hazy IPA coming out and some more cellared goodies!
